We are born in the region of the Central Valleys of Oaxaca, in San Dionisio Ocotepec, home of our Maestro Mezcalero, Don Clemente Martínez, and his family. Don Clemente began 40 years ago and has kept his father’s, Don Celso’s, legacy of making traditional 100% Agave mezcal for more than 70 years.
The care and attention invested by Don Clemente in the entire production process of each batch of mezcal is based on a very personal relationship between this sacred plant and a man who was born in the countryside, where the earth has no price, but true value, and to which he shows his deep gratitude and respect by making Jarabe de Pico, a handcrafted mezcal made 100% from the heart.
The hearts of the Agave, or piñas, are roasted in cone-shaped earthen pits with firewood and river stones from the region; then, they are crushed in a grinder with a millstone weighing a bit over a ton and pulled by a horse. It is then fermented in wooden vats and distilled in copper stills.
